Springerle (little jumpers): Once you try these they'll jump off the plate. These anise flavored cookies have a crisp, intricate exterior and a chewy center. The dough is pressed into carved molds to form the pictures of amazing detail. Beautiful, edible, little works of art!

Bayerisches Butterbrot (Bavarian butter bread). A satisfying and complex flavor mix of ground hazelnuts and dark chocolate with a tangy lemon glaze. A great cookie for highlighting the wonderful hazelnuts of Oregon. The original format is supposed to look like buttered rye bread but we think ours is much prettier!
Heidesand (heath sandy) WARNING: Don't be deceived by its simple appearance, this delicious “sandy” made with browned butter and a smidge of cardamom might have you craving its buttery flavor and slightly carmelized texture at all hours of the night. They are dangerously good.......
Spritzgebäck (extrusion cookie): Not only engineers love spritzgebäck and no wonder! This elegant, buttery confection has an added layer of flavor with the addition of ground up almonds and then we top it off with a button of dark chocolate. Perfection!
Hearts These heart-warming sandwich cookies are similar to our Folklorico but deliver a sweet message of love.

The Ischler (or Isler) First we start with two buttery, crispy walnut cookies and then fill them with an apricot jam filling. Overnight, a textural miracle occurs transforming the cookies into a chewy, nutty, tangy morsel.
Shortbread: These are a great option for party favors. Crispy on the outside, melt in your mouth buttery goodness. Choose from classic, chocolate, anise and orange flavors.
Haselnuss Makronen (hazelnut meringues): the most common reaction when eaten is an audible moan of pleasure quickly followed by the consumption of a second one! Light as a feather, crispy on the outside with a chewy center, these are an all time favorite. Another cookie that highlights the Oregon hazelnut. An added bonus: they are gluten and dairy free without altering the spectacular recipe.
Mandel Makronen (almond meringues): cousin to the hazelnut meringue, this one was inspired by the German zimtstern (cinnamon star) cookie. A "messer spitz" of cinnamon (the amount that fits on the tip of a knife) rounds out the more subtle flavor of the almond. We're petty sure you're going to like it! Gluten and dairy free.
Diamant (diamond) Sometimes the simplest thing can be the best. A classic butter cookie encircled in sugar that refelcts the light. So good.
This is the Mexican cousin of the snickerdoodle. A rich chocolate and cinnamon cookie with a dash of cayenne - the subtle heat shows up near the finish. Vegan.
